Different producing origins offer wheat classes and varieties with distinct characteristics in terms of protein content, gluten strength, kernel hardness, colour and end use. Product selection depends on the buyer’s intended application, required quality specifications and destination-market requirements.

Canada is among the origins recognized in international wheat markets and operates an official grading system administered by the Canadian Grain Commission. When Canadian wheat is offered, the applicable classes and grades may be specified in the commercial offer.

Common Wheat

Common wheat includes a wide range of classes and varieties suitable for different milling and food-processing applications. Depending on origin, class and quality specifications, it may be used to produce bread, noodles, all-purpose flour, breakfast cereals, cookies, crackers, pastries and other bakery and processed food products.

Durum Wheat

Durum is a hard wheat generally characterized by amber-coloured kernels, high protein content and distinctive gluten properties. It is primarily milled into semolina and is particularly suited to pasta, couscous and other durum-based foods.

Canada is an important durum-producing origin and is recognized internationally for certain durum classes used in high-quality semolina and pasta production.
